Monastic Order – Via Caritatis Pax

Primarily hand-harvested and strictly sorted, only perfectly healthy and ripe grapes are kept for this wine. Using a classical vinification process, the Pax Rouge is aged for 18 months before being bottled. 

The maintenance and service of the local ecological systems are key to the monks' conscientious wine-growing methods. The monks strive to let nature produce its fruits in its own time, ensuring that the land remains fertile for future generations.
